The challenge is easy. So easy, it probably shouldn't be called a challenge! Nonetheless, here's the lowdown... The Beef Checkoff folks are challenging us to make one small change in our diet for 30 days by eating protein-rich foods at every meal to feel the positive difference a protein-rich diet can have on our health and wellness. When you sign-up for the challenge, you receive daily emails with goals and tips to inspire you to stay on track! I like that!

If you need some ideas for how to add protein to your meals, Beef Checkoff has some great ones such as 'put an egg on it' to instantly add 6 grams of protein or 'get a little nuts' for another 6 grams of protein with just 1 serving of nuts or seeds! I add both hard boiled eggs and nuts/seeds to my salads to instantly add 12 grams of protein. Visit the website for more helpful tips like these.

I also found this guide to be very helpful when planning my meals, especially in the beginning. It lists protein-rich foods with serving sizes, protein, and calories right at your fingertips. I referred to this often to help me stay on track.

One of our favorite proteins is a juicy pan-seared steak smothered in a simple garlic butter. Steak is super easy to make and cooks up quickly too, making it perfect for even my busiest days! Whenever steak is on sale I take advantage of the lower price and pick one up for Don and me to share. New York Strip was on sale this week, so that's what is on the menu tonight. A 3 ounce portion of New York Strip Steak is 25 grams of protein. I pair it with a garden salad topped with a hard boiled egg for an extra 6 grams of protein, and my delicious protein-rich dinner is done with 31 grams of the good stuff! Easy peasy!

Pan-Seared Steak with Garlic Butter

Ingredients

  • 8 ounce New York Strip steak
  • 1/2 teaspoon sea salt, divided
  • 1/4 teaspoon freshly ground black pepper, divided
  • 2 tablespoons unsalted butter at room temperature
  • 1/4 teaspoon freshly minced garlic (or to taste)
  • 1/8 teaspoon fresh thyme leaves (or to taste)
  • pinch of salt, to taste

Instructions

  1. Early in the day or the night before, season the steak with 1/4 teaspoon sea salt and 1/8 teaspoon pepper on both sides and refrigerate. About and hour before ready to cook, remove the steak from the fridge and set it out to let it come to room temperature for more even cooking throughout.
  2. For the garlic butter, combine 2 tablespoons unsalted butter with 1/4 teaspoon freshly minced garlic, 1/8 teaspoon fresh thyme leaves, and a pinch of salt. Mix well. Give it a taste and adjust the seasonings as needed to suit your tastes.
  3. When ready to cook the steak, heat a heavy cast-iron skillet over mid-high heat. Let it heat up for a couple minutes. You want it good and hot! Add the steak to the dry, hot skillet and hear it sizzle! Let it sear for 3 minutes, undisturbed, to form a nice crust on the one side of the steak. Using tongs, pick up the steak and turn it over in the skillet. Allow it to sear another 2-3 minutes, undisturbed, to form a nice crust on that side too. Using tongs, stand the steak up and sear the sides too. For a steak that is about 1" thick, this cooking time will result in a nice mid-rare temperature. Keep in mind the cooking time will vary depending on how thick your steak is, the cut of meat, and the cooking temperature. Make adjustments as needed. I recommend using an instant read thermometer to check for doneness. I remove my steak when the temperature at the thickest point registers between 120-125°F.
  4. Remove the steak from the heat and allow it to rest for 10 minutes. Slice against the grain, top with garlic butter, and enjoy!
Yield: 2 Servings
Prep Time: 10 mins.
Cook time: 6 mins.
Total time: 16 mins.
